A look at less common food preparation techniques and some useful kitchen devices. Techniques include curing, cold smoking, Sous Vide cookery, reverse searing, temperature control for hamburger and sausage preparation, use of selectively permeable plastic membranes for charcuterie and dry ageing. There may be ice cream and coffee.
